Layering filo pastry

Purchased filo is very easy to use as long as you keep it covered to prevent it from drying out.

Place the sheets of filo pastry on a work surface and cover with a damp tea towel.Work with one sheet at a time, keeping the rest covered to stop them from drying out.
Brush the first sheet with melted butter , then place another sheet on top and brush again with melted butter. Repeat until you have the number of layers specified in the recipe.
